Ingredients
Boneless sirloin, rump-eye or centre-cut rump steaks (3cm thick)
2 tbsp Song Gai Mild Thai Red Curry Paste
2 tbsp Song Gai Lime & Chilli Sauce
Thai-Style Salad:
2 tbsp Song Gai Pure Sesame Oil
2 tbsp Song Gai Fish Sauce
2 punnets whole baby corn
2 punnets snowpeas
2 red salad onions
Method
* Coat 8 serving portions steak with curry paste and chilli sauce mixed together.
* Refrigerate until ready to cook.
* Preheat grill or hotplate on HIGH for 10 minutes.
* Cook steaks 3 minutes each side for rare, further 2 minutes each side on MEDIUM heat for medium, or further 4 minutes each side on MEDIUM heat for well done. Test steak by pressing with tongs.
* Rest steak, covered for a few minutes to let juices settle before serving.
* Thai-style Salad: Steam whole baby corn and snowpeas until vivid in colour but still crisp.
* Chill. When ready to serve, toss with sliced red salad onions and dress with 2 tbsp each sesame oil and fish sauce.
